Deep Dish Brownies


I am a huge fan of the boxed Ghirardelli brownie mix from costco.
I think they are delicious and I've never had a homemade brownie better
than those. That is until I had these brownies that my grandma made.
Be sure to serve these with some ice cream or a tall glass of milk!

3/4 C melted butter or margarine
1 1/2 C sugar
1 1/2 t. Vanilla
3 eggs
3/4 C flour
1/2 C cocoa
1/2 t baking powder
1/2 t salt
1 C chocolate chips
Pre-heat oven to 350 and grease an 8x8 pan.  In a medium bowl mix butter, sugar and vanilla.
Add eggs and beat with spoon. Combine dry ingredients and add to egg mixture and blend well.
stir in chips. Bake for 35-45 minutes or until brownies start to draw away from pan. Cool completely. MAY take longer for a doubled recipe in a 9x13 pan. DO NOT OVERBAKE!!

Peanut Butter Cookies with mini PB cup chips

I have a good friend named Lindy, her husband Logan is our home teacher
and he is the best home teacher because he brings us delicious treats made by his lovely wife.
This is one of those treats. They are soooo good! We have recieved them as regular cookies and as pizookies! These are my new favorite!
Here is a picture of the mini peanut butter cups. I put them next to a regular chocolate chip so you
could see how small they are. I purchased these babies at Sprouts where I can buy them in bulk.
If you can't find them, that would be very sad but you can use regular choco chips instead.

Lindy's PB cookies with mini PB chips
1 C Peanut butter
1 C butter
1 C white sugar
1 C Brown sugar
1 tsp vanilla
2 eggs
cream all above ingred. together.
Add:
2 1/2 C flour
1 1/2 tsp soda
1 tsp salt
2 C highly recommended mini pb cups or choco chips
(the mini pb cups are kinda spendy so I do sometimes use a little less pb cups and add some choco chips in with them to stretch it)
Bake at 375 for 10-12 minutes on a ungreased cookie sheet
so yummy!

Jalapeno Burgers with roasted root vegetables

Our good friend Dan Earl made us these amazing burgers a while back. I'm so glad he did because we have them all the time now! You won't be disappointed! If you seed the jalapeno the burgers will NOT be spicy! Which is how I like things, NOT spicy!

You will need:
1.5 pounds Ground beef
Onion, chopped
cilantro, chopped
garlic, minced
1 jalapeno, seeded and diced
Lawry's seasoned salt
Mix all together, form patties and grill.
serve on buns with whatever you like!

I served the burger along side some oven roasted veggies.
You can use whatever veggies you want. This is what I did:
1/2 a butternut squash, peeled,seeded and cut in cubes
Red onion, quartered
carrots
potatoes
Put on a cookie sheet in a single layer, drizzle with olive oil, salt and pepper.
Roast at 450 for about 40 minutes.
I love roasting vegetables, they turn out so good every time!

Poppyseed Chicken

This is my new favorite way to cook and store chicken.
One day I'll learn how to can chicken and then that, I'm sure
will be the best way to store chicken, but for now this will do!
Buy your chicken breast on sale.
Throw in crockpot with a little olive oil, salt and pepper.
Put on High for 3-4hrs.


When done in the crock pot, the chicken is super tender and just falls apart!
Shred it or chop it up!


Measure out how much chicken you want per bag ( I did 2 Cups)
and throw in freezer!

Now you have plenty of chicken on hand to make any chicken dish last minute!
Such as this Poppyseed chicken. I had never had this before until I moved into my current
ward where this is a very popular dish. I have a similar recipe for Ritz chicken which requires dipping whole breasts in milk,
crackers and butter. This to me, is easier to make and eat and is just as good if not better. This makes a lot!
No picture because I'm lame. Next time I make it I'll be sure to post a picture!

Poppyseed chicken
6-8 boneless skinless chicken breasts - cooked & diced
3 (10 3/4 oz.) cans cream of chicken soup
1 (16-oz) tub of sour cream
2 tubes of Ritz crackers
1 Tbsp. poppy seeds
1 stick butter - melted
Layer chicken in bottom of 9 x 13 pan. Combine soup & sour cream in a bowl and spread over chicken. Put Ritz crackers in a Ziploc bag and crush with a rolling pin. Add poppy seeds to Ziploc and shake well. Add butter to crackers and shake to coat everything. Spread cracker mixture to top of soup mixture. Bake in a 350 degree oven for 30 mins. Serve over cooked rice

Quick Fish Tacos

These were really yummy! They are also pretty healthy so go ahead and eat 5.
from my food everyday magazine, love it!

1 pnd boneless, skinless tilapia fillets, cut into 2 inch pieces
2 TBL extra virgin olive oil
Salt and Pepper
1/4C sour cream
1 lime, half finely zested and juiced, half cut into wedges
Hot sauce
12 corn tortillas
1/2 head red cabbage, thinly sliced
1 C fresh cilantro
1 small white onion finely chopped
*Heat broiler with rack in highest position. Pat fish dry with paper towels and gently coat with oil on a rimmed baking sheet. Season with Salt and pepper. Broil until fish is browned on top and flesh is opaque throughout, 5 minutes.
meanwhile, in a small bowl, combine sour cream, lime zest and juice, and a few dashes of hot sauce. Season with salt and pepper. Toast tortillas over a kitchen burner using tongs or wrap in parchment-lined foil and heat in oven, 5 min. Divide fish evenly among tortillas and top with cabbage, cilantro and onion. Serve with lime sour cream and lime wedges.

Baked Chicken Chimi's

These are a favorite at our house. Sooooo good and sooooo easy!
1 1/2 C chicken, cooked and chopped
2/3 C salsa
2 tsp cumin
1/2 tsp oregano
2 bunches green onion, chopped
1 C cheddar cheese, shredded
Flour tortillas (costco's uncooked tortillas are the best!)
2 TBL butter, melted
*Combine and heat first 5 ingredients in a saucepan until most liquid has evaporated. Spoon mixture onto your tortillas, top with cheese, fold and seal with seam side down in a greased 9x13 pan. Brush with butter and Bake at 475 for 13 minutes or until browned.

Note: I use more chicken because I like my chimi's really full therefore I increase the other ingredients as well but I just eyeball it. It's hard to go wrong with these. I also skip the melted butter part. I find that the uncooked tortillas from costco crisp up really well without it.

Baked Ziti

This is seriously one of my favorite recipes ever! We LOVE it! I got it from allrecipes.com This makes a FULL 9x13 pan. Enough to feed an army for like a week! Whenever I am making this just for my family, I always divide it into two 9x9 pans, bake one for that night and stick the other pan in the freezer for another night. The picture above is one recipe divided into two pans. Seriously, it's a lot! We can never finish off a full 9x13, but if you can, by all means make it all! I also coat the pasta with the sauce so as to not have any naked noodles. Note: I do not bake the ziti I plan to freeze. When you want to eat the frozen one, pull it out of the freezer the afternoon before and let it defrost all day and night, then bake the following evening for 30-40 minutes depending on how defrosted it was.
