Chicken Curry

I LOVE curry! If you don't like it, don't make it...
2.5-3lbs chicken parts like breast and thighs cut up
salt, pepper and paprika
olive oil (or use coconut oil if you want to get real fancy)
1 green apple chopped
1 onion chopped
1 TBL curry (start with 1.5 tsp and go with your tastes from there, I like 1 TBL)
1 can cream of mushroom soup
1 C cream (or coconut milk if you're cool like that)
Season chicken with seasonings (not curry yet) and brown in oil. Add onion and cook until chicken is almost done and onion is translucent, add apple and cook until apple is softned but not mush, and chicken is cooked through. Add curry, soup and cream, stir to combine. Thin with milk to desired consistency and serve over rice.
You could also just throw cut up chicken into a greased 9x13 pan, Make sauce with softened onion, apple and soup mixture, then pour over chicken and bake for 1 hour. Whichever way is easier for you.
