Sole in a lemon butter sauce
Darcy and I love fish but due to my concerns with mercury, ocean pollution, farm raised and other issues you have to deal with with fish I've avoided it lately. There's no doubt fish is good for you but you have to be careful the type you eat and how often. The big question is, does the good out weigh the bad? I don't know but I do know that fish oil is a good way to get those omega-3's without mercury and the such but they aren't quite as good as fresh from a fish. You can also get good amounts of omega-3's in walnuts, chia and flax seeds, and canola. When I do buy fish this is what I look for, ONLY buy wild and preferably Alaskan because the water isn't as polluted as other places and I never buy Atlantic fishies. The only exception to farm-raised fish I've heard is that farmraised catfish is better for you than wild, I THINK it has to do with the fact that they are bottom feeders and wild bottom feeders are worse than farm-raised ones. I don't care to eat a "bottom feeder" anyways, I mean, ew! ANYWAYS I could go on and on, this light and tasty fish dish is made with sole that I bought unfrozen at costco for like 3.99 a pond, way better than sprouts who didn't have sole and the next best thing was orange roughy for 9.99 a pound. Anyways this was good! I garnished with parsley only because I had no dill. Dill always goes well with fish. Click HERE for this recipe.
