Balsamic Chicken with Baby Spinach

I love this here chicken dish, Darcy thinks it's so-so. This is a Ellie Krieger recipe. I LOVE Ellie's recipes! Her book is "The Food you Crave" I use this book all the time! That you see is Chicken over wilted spinach on a bed of whole wheat couscous with a tomato balsamic vinegar sauce over top. I know you've always wondered what couscous is, it's teeny tiny pearls of pasta, It always tastes better if well seasoned DURING cooking, like boiling in broth vs water or seasoning the water with a good amount of salt and butter. Whole Wheat Couscous also has a lot of fiber per serving. I love couscous, Darcy thinks it's weird. I think it's great as a filler for baby food. I'll put some in Ryders pureed butternut squash to give some substance, fiber and goodness. Now make sure your baby likes texture, Ryder used to get the heebie jeebies if I fed him anything with texture but as of last week he's thankfully graduated from that stage.
