fillet your fish. (or in our case, butcher it) Season your fillets with some lemon pepper. Heat up some butter and oil on a grill pan over medium high heat and throw those fishies on there. Cook until opaque and easily flakable...(what color is opaque anyways?) Enjoy the fruits of your labor!

I tend to not fuss over presentation. Not that I'm against it, I'm usually just to hungry to garnish and make the dish look presentable. It's lucky I get a picture and the pictures I do get are CRAPPY!
That does look delish! Opaque is not a color, silly, it is not see thru!
