Cowboy Caviar

Here it is Molly, the recipe that I so rudely told you was better than yours.
It's just my opinion. My opinion probably doesn't matter much.
I'm sorry.

1 can shoepeg corn, drained
1 can blackeyed peas, drained
1 tomato, chopped
1 bunch cilantro (I use half the amount,go according to your cilantro tastes)
1 small bunch of green onions, chopped
2 avacados, chopped
2 cloves garlic, minced
1 tsp cumin
1/8 tsp pepper
3/4 tsp salt
1/4C red wine vinegar
1/4C olive oil
mix well and serve with tortilla chips.
You may want to add more salt according to your salty desires.
I also like it better after it's had a chance to sit and marinate in the fridge for a while.

  1. Yum! Yes, I am still offended! Just kidding. It looks a little more time consuming than mine and i have never had black eyed peas. Mine has black beans instead. I will definitely try this soon so I can let you know which I prefer!!! Hee, hee.
