Bean Pizza

I love this pizza!
2C pinto beans, cooked (I use black beans)
1/2C green pepper chopped
1/2lb ground beef
1 small can olives, sliced
1C onion chopped
1/2lb monterey jack cheese, grated (I just used cheddar)
8oz can tomato sauce
Red pepper flakes to taste (I didn't use)
2 tsp chili powder
1 tsp cumin
1/2 tsp salt
pizza dough
mash 1C of the beans. Brown beef with onions in a large skillet. Stir in mashed beans,tomato sauce,chili powder, cumin, and salt. Simmer for 10 minutes. Spread pizza dough onto greased pan. Spread with bean/beef mixture. Top with green pepper, olives, whole beans and cheese. Sprinkle with red pepper flakes. Bake 15 min or until crust is browned. Top with guacamole and sour cream.

I soaked and boiled the beans myself for the first time and they turned out really good, but I normally just use canned beans. I also did my own crust which is super easy!
Whole Wheat Pizza Crust:
1 1/3 C warm water
1 TBL active dry yeast
1 TBL molasses
mix together let stand at least 3 min.
when foamy, add yeast mixture to
2 1/2C whole wheat flour mixed with
1 tsp salt
mix together and knead adding flour as needed for 5-7min
alow to rise in a greased bowl, covered for about an hour or until
doubled.
roll out onto greased cookie sheet and pre-bake at 500 for 4 min.
add toppings and bake at 475 until toppings are bubblin'
*Feel free to do half wheat half white or all white.

  1. I keep meaning to try this pizza, it sounds yummy. I made that pizza crust last night and it was really good. Lee especially liked it. I also soaked beans for the first time for white bean chili this weekend. I measured the amount of beans I needed BEFORE I soaked them though, so I ended up with like 20 cups instead of just 6...
