Corn-meal crusted roasted ratatouille tart

I thought this tart was good but Darcy wasn't a huge fan. He said if I'd served it as an appetizer vs a main dish it would've been fine,this just didn't have enough substance for him. I really enjoyed it though. Click HERE for the recipe.
Here's the crust. The recipe says to weigh dough down with pie weights or rice for the first 10min of cooking, the stray rice makes for a nice touch. Also, I made a silly mistake and I used a springform pan which worked but didn't make for a pretty presentation. I knew to use a tart pan and I have the right size and everything, I just wasn't using my head. So if you don't have a tart pan a springform pan will do.

I buy pre shredded parmesan at Costco for convenience, price and bulk. I use a lot of parm so for me this is the way to go.

  1. OK - yum - I have a bunch of zucchini and onions already sliced and diced and I was going to make zucchini pie but was missing a couple of the ingredients. I could do this instead though...
