These chicken enchiladas with pumpkin sauce were good. Different, but good. I still like traditional enchiladas better but these were a nice change. I'm sure the pumpkin sauce had way better nutritional value to it than your average enchilada sauce! I've wanted to try this recipe for a long time but I was timid. I associate pumpkin with sweet things, which I know you can use pumpkin in many savory ways but I'm not used to that and this just seemed weird. I'm glad I tried it and I would totally make it again. It's not at all spicy if you be sure to clean out the jalapeno pepper of all the seeds and ribs. Be sure to wash your hands really good after handling a hot pepper or else you'll be sorry!
