chocolate Cherry Cake

I for one HATE chocolate covered cherries! I remember at christmas time my dad coming home from his paper route that he did for many many many years with loads of goodies as "tips" from the people he delivered papers to. I hated the boxes of chocolate covered "pie filling cherries"! I got all excited thinking they were chocolates and very disapointed to bite into cherry goo. (I also HATED the hazelnut chocolate seashells) As a matter of fact I also prefer plain cheesecake! Why mess up a good thing with canned, artificially flavored and sweetened blueberry or cherry crap? I tell you this as a prelude to this cake recipe, it calls for a can of cherry pie filling, DON'T let that deter you! It's the best cake EVER!(besides, the cherries get all mixed up in the batter so there's no chunks) This recipe is found in "The Cake Doctor" anyways, here you go!
Chocolate Cherry Cake
1 pkg devils food cake mix
1 can (21oz) cherry pie filling
2 large eggs
1 tsp almond extract
Preheat oven to 350. lightly spray 9x13 pan with pam.
Place cake mix, pie filling, eggs and extract into large mixing bowl. Blend with mixer on low speed for 1 min. scrape down sides and beat on medium speed for 2 min more. Pour in prepared pan. Bake until cake springs back when lightly touched and starts to pull away from sides of pan, 30-35 min. Remove pan from oven and put on rack while preparing glaze.
Glaze:
1C sugar
1/3C butter
1/3C whole milk (I used 2% and it was fine)
1C semi sweet choc chips
In small pan put sugar, butter and milk. Cook on med-low heat cook, stirring constantly for 1 min or until sugar is dissolved. Remove from heat and stir in chips, when chips have melted and glaze is smooth, pour it over warm cake. Cool 20min more before cutting.
You won't be dissapointed...I think it's best when eaten warm but fabulous either way!
